This is a small Christmas cake with a fruit cake sponge soaked in brandy and in the middle it has brandy butter cream (my own creation!) and a brandy butter cream topping.

It is then topped with royal icing decorations of your choice!

Ingredients: Brandy (or not on request), Raisins , Sultannas , Candied peel , Brown sugar , Butter , Self raising flour , Baking powder, Eggs ,Cinammon , Nutmeg ,Royal icing , Cherries , Green food colouring , Red food colouring and Golden glitter
